Fattoush Salad

Ingredients

  • 2 pita breads, toasted and broken
  • 3 tomatoes, chopped
  • 1 cucumber, chopped
  • 1 romaine lettuce, chopped
  • 4 radishes, sliced
  • 3 spring onions
  • Handful parsley and mint
  • For dressing: 4 tbsp olive oil, juice of 1 lemon, 1 tbsp sumac, 1 garlic clove, salt

Instructions

  1. Toast or fry the pita until crisp.
  2. Combine all the vegetables and herbs.
  3. Whisk the dressing with the sumac.
  4. Toss the salad with the dressing and add the crisp pita just before serving.
