Spanish Ezme

Ingredients

  • 3 tomatoes, finely chopped
  • 1 green pepper, finely chopped
  • 1 red onion, finely chopped
  • 2 garlic cloves, minced
  • 1 chilli, chopped
  • Handful parsley
  • 1 tsp sumac
  • 1 tsp paprika
  • 1 tbsp pomegranate molasses
  • 3 tbsp olive oil
  • Juice of 1/2 lemon
  • Salt

Instructions

  1. Chop everything as finely as you can manage.
  2. Combine in a bowl.
  3. Stir in the sumac, paprika, pomegranate molasses, oil, lemon and salt.
  4. Rest 15 minutes for the flavours to meld.
