Egyptian Ful Medames

Ingredients

  • 2 cans fava beans, drained
  • 3 garlic cloves, minced
  • Juice of 1 lemon
  • 1 tsp ground cumin
  • 3 tbsp olive oil
  • Salt to taste
  • To serve: chopped tomato, parsley, sliced egg (optional), warm flatbread

Instructions

  1. Warm the beans in a pan with a splash of water for 10 minutes.
  2. Mash roughly with the back of a spoon, leaving some beans whole.
  3. Stir in the garlic, lemon juice, cumin, salt and most of the oil.
  4. Spoon into bowls, drizzle with the remaining oil, and top with tomato and parsley.

  • A pinch of chilli flakes adds gentle warmth.

  • Best with warm flatbread for scooping.
