Ecuadorian Bolón de Verde

A green plantain ball stuffed with cheese or pork crackling and fried golden — Ecuador's most-loved breakfast.

Ingredients

  • 4 green plantains, peeled and chunked
  • 200g grated cheese (or fried pork)
  • 3 tbsp butter
  • 3 spring onions, finely chopped
  • 1 tsp cumin
  • Salt
  • Oil for frying

Instructions

  1. Fry plantain chunks in oil until soft and lightly golden, 10 minutes.
  2. Drain and mash hot with butter, spring onion, cumin and salt while still warm.
  3. Press cheese into the centre of a ball-shaped portion; seal.
  4. Re-fry the balls for 2-3 minutes until crispy outside.
