Ingredients

  • 4 slices thick white bread
  • 4 slices good ham
  • 100g Gruyère, grated
  • For the bechamel: 20g butter, 20g flour, 250ml milk, pinch of nutmeg
  • Dijon mustard

Instructions

  1. Make the bechamel: melt the butter, stir in the flour, then whisk in the milk until thick; season with nutmeg.
  2. Spread two slices of bread with mustard, then ham and some cheese; top with the other slices.
  3. Spread bechamel over the tops and scatter with the rest of the cheese.
  4. Grill until golden and bubbling.
