Ingredients

  • 125g plain flour
  • 2 eggs
  • 300ml milk
  • Pinch of salt
  • 1 tbsp melted butter, plus more for the pan

Instructions

  1. Whisk the flour, eggs, milk, salt and butter into a smooth, thin batter.
  2. Rest for 20 minutes.
  3. Heat a little butter in a non-stick pan and pour in a thin layer of batter, swirling to coat.
  4. Cook for a minute until the edges lift, then flip and cook briefly.
  5. Repeat, stacking the crêpes.
