Ingredients

  • 250g egg or rice noodles
  • For sauce: 3 tbsp tahini or peanut butter, 2 tbsp soy sauce, 1 tbsp rice vinegar, 1 tbsp sesame oil, 1 tbsp sugar, 1 garlic clove, 1 tsp chilli oil, 4 tbsp water
  • 1 cucumber, julienned
  • 2 spring onions
  • Sesame seeds
  • Crushed peanuts

Instructions

  1. Cook the noodles, rinse under cold water, drain well.
  2. Whisk the sauce ingredients until smooth.
  3. Toss the noodles with the sauce.
  4. Top with cucumber, spring onion, sesame seeds and peanuts.
