Ingredients

  • 3 eggs
  • 1 tbsp butter
  • 30g cheese, grated
  • 1/4 pepper, diced
  • 2 mushrooms, sliced
  • Handful spinach
  • Salt and pepper
  • Chives

Instructions

  1. Beat the eggs with salt and pepper.
  2. Soften the vegetables in a little butter; remove.
  3. Melt more butter in the pan over medium heat.
  4. Pour in the eggs and tilt as they set.
  5. Add the vegetables and cheese to one half.
  6. Fold and slide onto a plate.
  7. Top with chives.
