Carrot and Coriander Soup

A velvety, lightly spiced carrot soup with fresh coriander — bright, warming and very easy.

Ingredients

  • 600g carrots, chopped
  • 1 onion, chopped
  • 2 garlic cloves
  • 1 tsp ground coriander
  • 1 tsp cumin
  • 1.2 litres stock
  • Big handful fresh coriander
  • 3 tbsp oil
  • Salt and pepper

Instructions

  1. Soften the onion and garlic in the oil.
  2. Add the carrots and ground spices; stir for a minute.
  3. Pour in the stock and simmer until the carrots are soft, about 20 minutes.
  4. Add the fresh coriander and blend smooth.
  5. Season to taste.
