Caribbean Plantain

Ingredients

  • 3 ripe plantains (yellow with black spots)
  • 3 tbsp oil
  • Pinch of salt

Instructions

  1. Peel and slice the plantains diagonally.
  2. Heat the oil in a pan over medium heat.
  3. Fry the slices for 2-3 minutes a side until deep golden and caramelised.
  4. Drain on paper and sprinkle with a little salt.
