Caprese Salad

Ingredients

  • 4 ripe tomatoes, sliced
  • 2 balls fresh mozzarella, sliced
  • Handful fresh basil leaves
  • 3 tbsp good olive oil
  • 1 tbsp balsamic vinegar (optional)
  • Flaky salt and pepper

Instructions

  1. Arrange the tomato and mozzarella slices on a platter, alternating.
  2. Tuck the basil leaves between the slices.
  3. Drizzle with olive oil, season generously with salt and pepper.
  4. Finish with a little balsamic if using.
