Venezuelan Cachapa

Ingredients

  • 4 sweetcorn cobs, kernels removed
  • 2 tbsp sugar
  • 1/2 tsp salt
  • 3 tbsp flour
  • 1 egg
  • 3 tbsp milk
  • Butter
  • 200g white cheese, sliced

Instructions

  1. Blend corn kernels with sugar, salt, flour, egg and milk to a thick rough batter.
  2. Heat butter in a pan.
  3. Pour in a ladle; spread to a thick pancake.
  4. Cook 3-4 minutes a side until golden.
  5. Top one half with cheese; fold over.
  6. Press lightly until the cheese melts.
