Ingredients

  • 200g dark chocolate, chopped
  • 180g butter
  • 250g sugar
  • 3 eggs
  • 1 tsp vanilla
  • 120g plain flour
  • 30g cocoa powder
  • Pinch of salt

Instructions

  1. Heat the oven to 180C and line a square tin.
  2. Melt the chocolate and butter together over a low heat or in the microwave.
  3. Whisk in the sugar, then the eggs one at a time, and the vanilla.
  4. Fold in the flour, cocoa and salt until just combined.
  5. Pour into the tin and bake for 22-25 minutes β€” the centre should still wobble slightly.
  6. Cool completely in the tin before cutting.

  • Slightly underbake them; brownies firm up as they cool.
