British Eton Mess

Ingredients

  • 400g fresh strawberries, hulled
  • 3 tbsp icing sugar
  • 1 tsp lemon juice
  • 400ml double cream
  • 1 tsp vanilla
  • 100g ready meringue nests, crushed
  • Fresh mint

Instructions

  1. Halve most of the strawberries; blend a handful with icing sugar and lemon juice to a coulis.
  2. Whip the cream with vanilla to soft peaks.
  3. Fold in most of the crushed meringue and most of the strawberries.
  4. Drizzle in some of the coulis to create swirls — don't fully mix.
  5. Spoon into glasses.
  6. Top with remaining strawberries, crushed meringue, mint and a drizzle of coulis.
