Ingredients

  • 4 eggs
  • 2 large tortillas
  • 1/2 can black beans, warmed
  • 1/2 cup grated cheese
  • 2 tbsp salsa
  • 1 tbsp butter
  • Salt and pepper
  • Avocado (optional)

Instructions

  1. Scramble the eggs softly in the butter; season.
  2. Warm the tortillas.
  3. Fill each with eggs, beans, cheese, salsa and avocado.
  4. Fold the sides in and roll tightly.
  5. Optional: toast in a dry pan to seal.
