Brazilian Pão de Queijo (Cheese Bread)

Ingredients

  • 250g tapioca flour
  • 120ml milk
  • 60ml oil
  • 1 egg
  • 100g grated cheese (parmesan or similar)
  • 1/2 tsp salt

Instructions

  1. Heat the milk, oil and salt until just boiling.
  2. Pour over the tapioca flour and mix — it will be lumpy.
  3. Let it cool slightly, then beat in the egg and cheese until smooth and sticky.
  4. Roll into small balls with oiled hands.
  5. Bake at 190C for 18-20 minutes until puffed and golden.
