Colombian Arepa de Huevo

Ingredients

  • 2 cups precooked white cornmeal
  • 2 cups warm water
  • 1 tsp salt
  • 4 eggs
  • Oil for frying

Instructions

  1. Mix cornmeal, water and salt; rest 5 minutes.
  2. Shape into 8 flat discs.
  3. Fry in 180C oil for 1 minute a side until they puff up.
  4. Cool slightly; slit one edge to make a pocket.
  5. Crack an egg into each.
  6. Pinch the slit closed.
  7. Return to oil for 2-3 minutes until egg is set.
  8. Drain.
