Nigerian Akara (Bean Fritters)

Ingredients

  • 2 cups dried black-eyed beans, soaked overnight
  • 1 onion, roughly chopped
  • 2 scotch bonnets (or to taste)
  • 1 tsp salt
  • Oil for frying

Instructions

  1. Rub the soaked beans between your hands to slip off the skins; rinse and drain.
  2. Blend the beans with the onion, chilli and salt, adding only a splash of water — the batter should be thick.
  3. Whisk vigorously for 3 minutes until light and fluffy.
  4. Heat the oil to medium-high.
  5. Drop in spoonfuls and fry until deep golden, turning, about 5 minutes.
  6. Drain on paper.
