Cuban Yuca con Mojo

Ingredients

  • 1kg yuca, peeled and cut into batons
  • For mojo: 8 garlic cloves minced, 1 onion sliced, juice of 3 limes and 1 orange, 1 tsp cumin, 1 tsp oregano, 100ml olive oil, salt

Instructions

  1. Boil yuca in salted water 25 minutes until very tender.
  2. Drain.
  3. Heat olive oil; fry garlic and onion until fragrant.
  4. Off heat, stir in lime and orange juice, cumin, oregano and salt.
  5. Pour sizzling mojo over hot yuca; toss.
