Vietnamese Lemongrass Pork

Tender pork stir-fried with lots of lemongrass, garlic and chilli — bright, fragrant and ready in fifteen minutes.

Ingredients

  • 500g pork shoulder or tenderloin, sliced
  • 3 lemongrass stalks, very finely chopped (white parts only)
  • 4 garlic cloves
  • 2 shallots
  • 2 red chillies
  • For marinade: 2 tbsp fish sauce, 1 tbsp soy sauce, 1 tbsp sugar, 1 tsp pepper, 1 tbsp oil
  • 3 tbsp oil for frying
  • Lime, coriander, spring onion

Instructions

  1. Mix the pork with all the marinade ingredients and the lemongrass, garlic, shallot and chilli.
  2. Rest 15 minutes.
  3. Heat oil in a hot pan and stir-fry the pork 5-7 minutes until caramelised.
  4. Squeeze over lime and finish with coriander and spring onion.

  • Chop the lemongrass as finely as you can — only the white part.
  • High heat caramelises the sugar in the marinade.

Serving suggestions

  • Lovely over rice or in lettuce wraps.
