Ingredients

  • 700g chicken thighs, cubed
  • 3 tbsp sugar
  • 2 tbsp water
  • 3 tbsp fish sauce
  • 2 garlic cloves, minced
  • 1 thumb ginger, grated
  • 1 chilli, sliced
  • 2 spring onions
  • Black pepper

Instructions

  1. Melt the sugar with the water in a pan until it turns golden caramel.
  2. Carefully add the chicken and stir to coat.
  3. Add the fish sauce, garlic, ginger and a splash of water.
  4. Simmer for 15-20 minutes until the chicken is tender and glazed.
  5. Finish with chilli, spring onion and black pepper.
