Vegan Lentil Bolognese

Ingredients

  • 1.5 cups brown lentils
  • 1 onion, 2 carrots, 2 celery, all finely diced
  • 3 garlic cloves
  • 2 tbsp tomato paste
  • 1 can chopped tomatoes
  • 500ml stock
  • 1 tsp oregano
  • 3 tbsp olive oil
  • Salt and pepper
  • Pasta to serve

Instructions

  1. Soften the onion, carrot and celery in oil for 8 minutes.
  2. Add the garlic and tomato paste.
  3. Stir in the lentils, tomatoes, stock and oregano.
  4. Simmer 30 minutes until the lentils are tender and the sauce is rich.
  5. Season and serve over pasta.
