Ingredients

  • 1.5 cups cooked rice
  • 1 can black beans, drained and warmed
  • 1 cup sweetcorn
  • 1 avocado, sliced
  • 1 cup salsa
  • Handful coriander
  • Juice of 1 lime
  • 1 tsp cumin
  • Sliced jalapeño

Instructions

  1. Warm the rice and toss with cumin and lime.
  2. Build the bowls: rice, beans, corn, salsa, avocado.
  3. Top with coriander and jalapeño.
  4. Squeeze of lime on top.
