Turkish Kofte

Ingredients

  • 500g beef or lamb mince
  • 1 onion, grated and drained
  • 2 garlic cloves, grated
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp dried mint
  • Small handful parsley, chopped
  • Salt and pepper
  • Oil for the pan

Instructions

  1. Mix all the ingredients well in a bowl, kneading for a minute or two so the mixture firms up.
  2. Shape into oval patties or sausages around skewers.
  3. Rest in the fridge for 15 minutes — this helps them hold their shape.
  4. Cook on a hot griddle, grill or pan for 4-5 minutes a side until charred and cooked through.

Tara’s tips

  • Squeezing the grated onion of its liquid stops the mix going wet.
  • Resting the kofte before cooking prevents them falling apart.

Serving suggestions

  • Serve with warm flatbread, yoghurt, grilled tomato and a sumac onion salad.

Storage & reheating

Cooked kofte keep for 3 days and reheat well.
