Trinidad Roti

Ingredients

  • 400g plain flour
  • 2 tsp baking powder
  • 1 tsp sugar
  • 1/2 tsp salt
  • 250ml warm water
  • 4 tbsp melted ghee or butter, plus more for cooking
  • Oil

Instructions

  1. Mix flour, baking powder, sugar, salt and water into a soft dough; rest 30 minutes.
  2. Divide into balls, roll thin, brush with ghee, fold like a fan, then coil.
  3. Rest another 15 minutes, then roll out to a thin round.
  4. Cook on a hot griddle 1-2 minutes a side, brushing with ghee.
  5. Crush slightly with two flat utensils to reveal the flaky layers.
