Tomato and Egg Stir-Fry

Ingredients

  • 4 eggs
  • 4 ripe tomatoes, in wedges
  • 2 spring onions, sliced
  • 1 tsp sugar
  • 1 tsp soy sauce
  • 1 tsp sesame oil
  • 3 tbsp oil
  • Salt
  • Cooked rice

Instructions

  1. Beat the eggs with a pinch of salt.
  2. Scramble in 2 tbsp hot oil until just set; remove.
  3. Stir-fry the tomatoes in the remaining oil for 3 minutes until they release juice.
  4. Add sugar, soy sauce and salt; let it bubble into a light sauce.
  5. Return the eggs and toss gently with sesame oil and spring onion.
  6. Serve over rice.
