Tomato Basil Pasta

A quick fresh tomato sauce with garlic, basil and good olive oil — proof that simple is sometimes the best.

Ingredients

  • 300g pasta
  • 3 tbsp olive oil
  • 3 garlic cloves, sliced
  • 1 can chopped tomatoes
  • 1 tsp sugar
  • Big handful fresh basil, torn
  • Salt and pepper
  • Parmesan to serve (optional)

Instructions

  1. Cook the pasta in well-salted water until al dente; reserve a cup of pasta water.
  2. Warm the oil and gently fry the garlic until pale gold.
  3. Add the tomatoes, sugar and a pinch of salt; simmer for 10 minutes.
  4. Tear in the basil, toss in the pasta with a splash of pasta water, and stir until glossy.
  5. Finish with black pepper and parmesan.
