Thai Satay Chicken Skewers

Ingredients

  • 600g chicken thigh, in strips
  • For marinade: 1 tbsp turmeric, 1 tsp cumin, 1 tsp coriander, 3 tbsp soy sauce, 2 tbsp brown sugar, 1 can coconut milk (use 1/3 for marinade)
  • For peanut sauce: 5 tbsp peanut butter, the rest of the coconut milk, 1 tbsp soy, 1 tbsp sugar, 1 tbsp lime, 1 tsp chilli paste
  • Skewers

Instructions

  1. Marinate the chicken at least 2 hours.
  2. Thread onto skewers.
  3. Grill over high heat 4-5 minutes a side until charred.
  4. Simmer the peanut sauce ingredients until thick.
  5. Serve the skewers with the warm sauce.
