Thai Mango Sticky Rice

Sweet sticky rice with ripe mango and salty-sweet coconut sauce — Thailand's most beloved summer dessert.

Ingredients

  • 1.5 cups glutinous rice, soaked 4 hours
  • 1 can coconut milk
  • 100g sugar
  • 1 tsp salt
  • 2 ripe mangoes, sliced
  • Toasted sesame seeds and crispy mung beans to garnish

Instructions

  1. Drain the soaked rice; steam in a steamer lined with muslin for 20-25 minutes until tender.
  2. Warm two-thirds of the coconut milk with most of the sugar and salt; pour over the hot rice and rest 10 minutes.
  3. Reduce the remaining coconut milk with a little salt to a sauce.
  4. Plate the rice with mango slices and the salty coconut sauce.
  5. Top with sesame seeds.
