Ingredients

  • 400g chicken or pork mince
  • 2 tbsp uncooked rice
  • 3 shallots, sliced
  • 3 spring onions
  • Big handful mint and coriander
  • 2-3 tbsp fish sauce
  • Juice of 2 limes
  • 1 tsp sugar
  • Chilli flakes
  • Lettuce leaves to serve

Instructions

  1. Toast the rice in a dry pan until golden, then grind to a coarse powder.
  2. Cook the mince with a splash of water and salt until just done.
  3. Mix with the shallot, spring onion, fish sauce, lime, sugar and chilli.
  4. Stir in the herbs and toasted rice powder.
  5. Serve in lettuce cups.
