Thai Basil Chicken (Pad Krapow)

Ingredients

  • 400g chicken mince
  • 4 garlic cloves, minced
  • 2-4 red chillies, chopped
  • 1 onion, sliced
  • 2 tbsp oil
  • Big handful Thai basil
  • For the sauce: 2 tbsp soy sauce, 1 tbsp oyster sauce, 1 tsp fish sauce, 1 tsp sugar
  • Fried eggs to serve

Instructions

  1. Mix the sauce ingredients.
  2. Heat the oil and fry the garlic and chilli for 30 seconds.
  3. Add the chicken mince and stir-fry over high heat until browned.
  4. Add the onion and the sauce; toss for 2 minutes.
  5. Stir through the basil until just wilted.
