Sweet Potato and Black Bean Tacos

Ingredients

  • 2 sweet potatoes, cubed
  • 1 can black beans
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 3 tbsp olive oil
  • 8 small tortillas
  • 1 avocado, sliced
  • For slaw: 2 cups shredded cabbage, juice of 1 lime, salt
  • Coriander, lime

Instructions

  1. Toss the sweet potato with oil, paprika, cumin and salt; roast at 200C for 25 minutes.
  2. Warm the beans with a pinch of cumin.
  3. Mix the slaw.
  4. Warm the tortillas.
  5. Fill with sweet potato, beans, avocado and slaw.
  6. Squeeze with lime and scatter with coriander.
