Sweet Corn Fritters

Crispy sweet corn and spring onion fritters with chilli — perfect with poached eggs for brunch or as a snack.

Ingredients

  • 400g sweetcorn
  • 3 spring onions
  • 1 chilli, chopped
  • Handful coriander
  • 2 eggs
  • 100g flour
  • 1 tsp baking powder
  • Salt and pepper
  • Oil for frying

Instructions

  1. Mix all ingredients into a thick batter.
  2. Heat a little oil in a pan.
  3. Drop in spoonfuls and flatten gently.
  4. Cook 2-3 minutes a side until golden and cooked through.
