Spinach Dal

Ingredients

  • 1.5 cups yellow lentils (toor or moong)
  • 300g spinach
  • 1 onion, chopped
  • 3 garlic cloves
  • 1 tomato, chopped
  • 1 tsp cumin seeds
  • 1 tsp turmeric
  • 1 tsp cumin powder
  • 1 green chilli
  • 3 tbsp oil
  • Salt

Instructions

  1. Boil the lentils with turmeric and salt until soft, about 20 minutes.
  2. In a separate pan, heat the oil and pop the cumin seeds.
  3. Add the onion, garlic and chilli; cook until golden.
  4. Add the tomato and cumin powder.
  5. Stir this tempering into the lentils, then add the spinach until wilted.
  6. Simmer 5 minutes and adjust the consistency with water.

  • The tempering (tarka) poured over at the end carries the flavour.
  • Add water to your preferred thickness.

Serving suggestions

  • Serve with rice or roti.

Storage & reheating

Keeps 3 days; thickens, loosen with water.
