Spanish Lentil Stew

Ingredients

  • 1.5 cups brown lentils
  • 1 onion, 2 carrots, 2 celery, diced
  • 3 garlic cloves
  • 1 red pepper, diced
  • 1 tbsp smoked paprika
  • 1 can chopped tomatoes
  • 1.2 litres stock
  • 3 tbsp olive oil
  • 1 bay leaf
  • Salt and pepper

Instructions

  1. Soften the onion, carrot, celery and pepper in the oil.
  2. Stir in the garlic and smoked paprika.
  3. Add the lentils, tomatoes, stock and bay leaf.
  4. Simmer for 30 minutes until the lentils are tender.
  5. Season and serve.
