Sheer Khurma

Ingredients

  • 1.2 litres full-fat milk
  • 50g vermicelli (sevaiyan), broken into small pieces
  • 3 tbsp ghee
  • 80g sugar (or to taste)
  • 6 dates, pitted and chopped
  • Handful chopped almonds, pistachios and raisins
  • 4 cardamom pods, crushed
  • A few strands of saffron

Instructions

  1. Heat the ghee and fry the vermicelli over low heat until pale golden.
  2. Pour in the milk and bring to a gentle simmer.
  3. Add the cardamom, saffron, dates and nuts.
  4. Cook for 20 minutes, stirring often, until the milk has thickened and the vermicelli is soft.
  5. Stir in the sugar and cook another 5 minutes.
  6. Serve warm or chilled.

  • Toast the vermicelli carefully — it goes from gold to burnt quickly.
  • For an extra-rich version, replace some milk with evaporated milk.

Serving suggestions

  • Traditionally served on Eid morning as the day's first sweet.

Storage & reheating

Keeps 3 days in the fridge; thickens, loosen with milk.
