Nepali Sel Roti

A festive ring-shaped Nepali rice doughnut, crisp outside and soft inside — eaten at Diwali and Tihar.

Ingredients

  • 400g rice, soaked overnight
  • 100g sugar
  • 1 tsp cardamom
  • 1 tbsp ghee, melted
  • 100ml milk
  • Pinch of salt
  • Oil for frying

Instructions

  1. Drain rice and blend with sugar, cardamom, ghee, milk and salt to a thick smooth batter; rest 2 hours.
  2. Heat oil to medium.
  3. Pour batter through a piping bag (or makeshift bottle) into the oil in a ring shape.
  4. Fry 1 minute a side until golden.
  5. Drain on paper.

  • Don't fry too hot or they brown without cooking inside.
