Sausage Rolls

Ingredients

  • 500g sausage meat (or sausages, casings removed)
  • 1 onion, finely chopped
  • 1 tsp dried sage
  • 1 tsp dried thyme
  • 1 tbsp Dijon mustard
  • 500g puff pastry
  • 1 egg, beaten
  • Sesame or poppy seeds
  • Salt and pepper

Instructions

  1. Mix the sausage meat with the onion, herbs, mustard and seasoning.
  2. Roll the pastry and cut into two long rectangles.
  3. Pipe or spoon the meat down the centre of each.
  4. Brush the edges with egg, fold over and seal.
  5. Cut into pieces and place on a tray.
  6. Brush with egg, scatter with seeds and bake at 200C for 22-25 minutes until puffed and golden.
