Ingredients

  • 600g chicken thigh, cubed
  • For marinade: 3 tbsp soy sauce, 2 tbsp kecap manis, 2 tbsp oil, 3 garlic cloves, 1 thumb ginger, 1 tsp ground coriander, 1 tsp turmeric, juice of 1 lime
  • For peanut sauce: 200g peanut butter, 200ml coconut milk, 2 tbsp kecap manis, 2 tbsp soy sauce, 1 tbsp lime juice, 1 chilli, 2 garlic cloves
  • Wooden skewers, soaked
  • Cucumber, rice cake to serve

Instructions

  1. Blend marinade; coat chicken; marinate 30 minutes.
  2. Thread onto skewers.
  3. Grill over high heat 6-8 minutes, turning, until charred and just cooked.
  4. Blend peanut sauce; warm in a pan with a splash of water.
  5. Serve skewers with peanut sauce and cucumber.
