Russian Beef Stroganoff

Ingredients

  • 500g beef sirloin, thinly sliced
  • 400g mushrooms, sliced
  • 2 onions
  • 2 tbsp flour
  • 1 tsp paprika
  • 2 tbsp Dijon mustard
  • 300ml beef stock
  • 200ml soured cream
  • 3 tbsp butter
  • Parsley

Instructions

  1. Sear beef in butter 1-2 minutes; lift out.
  2. Soften onions, then add mushrooms; brown well.
  3. Stir in flour and paprika.
  4. Whisk in stock and mustard; simmer 5 minutes.
  5. Stir in soured cream off direct heat.
  6. Return beef briefly to warm through.
  7. Finish with parsley.
