Roasted Vegetable Traybake

Ingredients

  • 2 courgettes, 2 peppers, 1 aubergine, 1 red onion, all chunked
  • 2 cups cherry tomatoes
  • 4 garlic cloves
  • 4 tbsp olive oil
  • 1 tbsp dried herbs
  • Salt and pepper

Instructions

  1. Heat the oven to 200C.
  2. Toss all the vegetables with the oil, herbs and seasoning.
  3. Spread on a large tray in a single layer.
  4. Roast for 30-35 minutes, turning once, until caramelised.

  • Cut everything a similar size so it cooks evenly.

  • Lovely with couscous, over pasta, or with grilled meat.
