Ingredients

  • 10 egg yolks
  • 200g sugar
  • 100g desiccated coconut
  • 50g butter, melted
  • Pinch of salt

Instructions

  1. Whisk yolks, sugar, coconut, butter and salt.
  2. Rest 15 minutes.
  3. Butter mini muffin moulds; dust with sugar.
  4. Fill with the mixture.
  5. Place moulds in a baking tray with hot water (bain-marie).
  6. Bake at 170C for 30 minutes until set with a glossy top.
  7. Cool, then chill before turning out.
