Ingredients

  • 4 tortillas
  • 2 cups grated cheese
  • 1 pepper, sliced
  • 1/2 onion, sliced
  • 1 tsp cumin
  • Optional: cooked chicken or beans
  • Oil
  • To serve: salsa, soured cream

Instructions

  1. Soften the pepper and onion in a little oil with the cumin.
  2. Lay a tortilla in a dry pan, scatter with cheese, vegetables and any extras.
  3. Top with another tortilla and cook until golden, then flip.
  4. Cook until the cheese is melted and the outside crisp.
  5. Cut into wedges.

  • Don't overfill or the cheese leaks out.
  • Medium heat melts the cheese before the tortilla burns.
