Polish Sernik (Cheesecake)

Ingredients

  • For base: 200g digestive biscuits crushed, 80g butter melted
  • For filling: 800g ricotta (or twaróg), 200g sugar, 5 eggs, 150g butter softened, 2 tbsp flour, 1 tsp vanilla, zest and juice of 1 lemon
  • 100g raisins (optional)

Instructions

  1. Mix biscuit base; press into a lined tin.
  2. Beat butter and sugar; add eggs one at a time.
  3. Mix in cheese, flour, vanilla, lemon and raisins.
  4. Pour over the base.
  5. Bake at 160C for 60 minutes until just set with a slight wobble.
  6. Cool in the oven with the door ajar.
  7. Chill 4 hours.
