Ingredients

  • 1kg yellow potatoes (or regular waxy)
  • 3 tbsp aji amarillo paste (or yellow chilli paste)
  • Juice of 3 limes
  • 3 tbsp oil
  • For filling: 300g cooked shredded chicken, 3 tbsp mayo, 1 spring onion
  • 1 avocado, sliced
  • Boiled egg, olives

Instructions

  1. Boil and mash the potatoes; while warm, mix with aji paste, lime, oil and salt.
  2. Mix the chicken with mayo and spring onion.
  3. Layer in a small dish: potato, chicken, avocado, potato.
  4. Chill 30 minutes, then unmould.
  5. Garnish with boiled egg and olives.

Tara’s tips

  • Yellow potatoes give the proper colour, but waxy white works.
  • Aji amarillo is the signature — find it in jars at Latin shops.

  • Serve cold as a starter.
