Peruvian Anticuchos

Peruvian skewers of beef heart (or beef) marinated in ají panca and grilled over coals — Lima's most beloved street food.

Ingredients

  • 800g beef heart or sirloin, cubed
  • For marinade: 3 tbsp ají panca paste, 1 tbsp cumin, 1 tbsp oregano, 6 garlic cloves grated, 1/4 cup red wine vinegar, 1 tsp salt, 3 tbsp oil
  • Wooden skewers, soaked
  • Lime, salsa criolla and boiled potato to serve

Instructions

  1. Mix the marinade; coat the beef cubes; marinate at least 4 hours, ideally overnight.
  2. Thread onto skewers, 4-5 cubes each.
  3. Grill over high heat or hot grill 2-3 minutes a side until charred and just cooked.
  4. Brush with leftover marinade during cooking.
  5. Serve with lime, salsa criolla and a piece of boiled potato or corn.
