Pav Bhaji

Ingredients

  • 4 potatoes, boiled
  • 1 cup peas
  • 1 cauliflower, chopped and boiled
  • 2 onions, chopped
  • 3 tomatoes, chopped
  • 1 green pepper, diced
  • 2 tbsp ginger-garlic paste
  • 3 tbsp pav bhaji masala
  • 1 tsp red chilli powder
  • 5 tbsp butter
  • Soft buns
  • Lemon and onion to serve
  • Salt, coriander

Instructions

  1. Mash the cooked potatoes, peas and cauliflower together.
  2. Cook the onion and pepper in half the butter, then add the ginger-garlic.
  3. Stir in the tomatoes, pav bhaji masala and chilli; cook until pulpy.
  4. Add the mashed vegetables with a little water; simmer 10 minutes, mashing as you go.
  5. Toast the buns in the remaining butter.
  6. Serve with chopped onion, lemon and coriander.
