Portuguese Pastel de Nata

Ingredients

  • 1 sheet ready puff pastry
  • For custard: 200ml double cream, 100ml milk, 100g sugar, 1 cinnamon stick, lemon peel, 4 egg yolks, 1 tbsp flour, 1 tsp vanilla

Instructions

  1. Roll pastry into a tight log; slice into 12 rounds.
  2. Press each into a muffin tin, working pastry up the sides.
  3. Make custard: warm cream, milk, sugar, cinnamon and lemon peel.
  4. Whisk yolks with flour; strain in warm cream; cook gently until just thickened.
  5. Cool slightly; pour into pastry cups.
  6. Bake at 250C for 12-15 minutes until tops blister.
