Ingredients

  • 4 chicken pieces
  • 2 onions, chopped
  • 3 garlic cloves
  • 3 tomatoes, chopped
  • 2 peppers, chopped
  • 1 carrot, diced
  • 2 spring onions
  • 1.5 litres chicken stock
  • For bori bori (dumplings): 1 cup cornmeal, 1/2 cup grated cheese, 1 egg, 1/4 cup milk, salt
  • 3 tbsp oil
  • Parsley

Instructions

  1. Brown the chicken in oil.
  2. Soften vegetables and add to the pot.
  3. Pour in stock and simmer 25 minutes until chicken is tender.
  4. Mix the dumpling ingredients to a soft mixture.
  5. Roll into small marble-sized balls.
  6. Drop into the simmering soup; cook 12-15 minutes until floating and cooked through.
  7. Finish with parsley.
