Vanilla Panna Cotta

A silky, set vanilla cream with a delicate wobble β€” an elegant Italian dessert from just a few ingredients.

Ingredients

  • 500ml double cream
  • 100ml milk
  • 60g sugar
  • 1 vanilla pod (or 1 tsp vanilla)
  • 2 leaves gelatine, soaked in cold water
  • Berries to serve

Instructions

  1. Heat the cream, milk, sugar and vanilla until just steaming; do not boil.
  2. Squeeze out the gelatine and whisk into the warm cream until dissolved.
  3. Strain into 4 ramekins.
  4. Chill at least 4 hours until set.
  5. Dip briefly in warm water and turn out, or serve in the dish.

Tara’s tips

  • Don't boil after adding gelatine or it weakens.
  • Set just firm enough to wobble β€” over-setting makes it stiff.
